Zesty Lemon Chicken Meatballs

Directions: Meatballs

  • 1 lb Ground Chicken
  • ¼ tsp Fine Ground Pepper
  • ½ tsp Chili Powder
  • 1 tsp Dill
  • 1 ½ tsp Garlic Salt
  • Zest and Juice of 1 Lemon
  • ¼ Cube of Butter

Combine all of these ingredients and then form into small approx 1” balls and then sauté in the melted butter over medium heat until nicely browned all over and cooked through. Remove from heat and set aside while you prepare the “bed” of sautéed veggies.

Sauteed Veggies

  • 3 yellow squash grated
  • 4 carrots grated
  • 4-5 Green Onions Finely Chopped
  • ¼ Cube Butter
  • Juice of ½ of a Lemon
  • Salt and Pepper to taste

First melt butter and add lemon juice in a sauté pan then increase heat to high and add remaining ingredients. Sauté until veggies are well cooked and soft. Serve with meatballs over the top.
