What about pork rinds as a crunchy substitute for chips?

by Bette

I sometimes want something crunchy and salty......I love pork rinds and was wondering if I can use those sometimes as a substitute?

I did Atkins many years ago and they were permissible but I want to know what you think?

Thank you for your question Bette

Pork rinds are in fact an acceptable whole food. Many have a difficult time accepting pork rinds as a health food but if we look back on our ancestry, we ate snout to tail.

I don't promote them as a health food due to the processing but they are high in monounsaturates and do curb that crunch craving.

I also recommend kale chips which you can find in the raw section of Whole Foods Market.

In good health
