Slow Roasted Chicken Thighs


  • 6-10 Chicken Thighs, Skin On
  • Pappy's Dry Rub (Costco)
  • Extra Virgin Olive Oil

Preheat convection oven to 250, if no convection, 275

Rinse chicken thighs, pat dry. Drizzle with olive oil, sprinkle with Pappy's seasoning but do be careful as this is a high salt mixture.

A light dusting is adequate.

Slow roast on cookie sheet or glass dish for 2 hours until skin is crispy.

These are perfect low carb chicken recipes and lovely plain or tossed in a bowl with hot sauce and butter and returned to the oven for a few moments as "Slow Roasted Hot Thighs" Sounds sexy doesn't it?
