Raw Egg Consumption - ie. Mayonnaise Recipe

Hello Misty,

I just made your homemade mayonnaise and it tastes GREAT! I just have a concern about eating raw eggs.

I'm sure that if you recommend them in the recipe, you feel that it's safe to eat them. There is so much conflicting information on the internet on this subject!

So, can you tell us your opinion and what you base it on?

Hello and thank you for your question!

As I mention on the Homemade Mayonnaise recipe page, it is important that your eggs come from fresh organic sources and preferrably, pastured.

I know there are a lot of conflicting pieces of information out there and I generally trust one of my best resources, the Weston A Price foundation where you will find a host of nutrition information. This is where a great deal of my sources come from.

I have been utilizing and enjoying raw organic pastured eggs in my mayonnaise for more than 10 years now and never have I had even a smidge of food poisoning.

It is said that the chances for Salmonella from consuming raw organic eggs is around 1 in 20,000-30,000.

There are higher ratios of accidents out there so do consider yourself safe!
