Quick Chicken Cordon Bleu


  • 4 Boneless, Skinless Chicken Breasts
  • 1/2 Tsp. Fresh Ground Pepper divided
  • 1/4 Tsp. Sea Salt
  • 1/3 Cup Shredded Gruyere or Swiss Cheese
  • 2 Tbs. Cream Cheese
  • 1/4 Cup Finely Grated Parmesan Cheese
  • 1 Tbs. Fresh or Dried Chopped Parsley
  • 2 Tbs. Olive Oil
  • 1/2 Cup Chopped Ham


Preheat oven to 400 F.

Sprinkle chicken with 1/4 tsp. pepper and salt. Combine cheese and cream cheese in a bowl. Combine the remaining 1/4 tsp. pepper with parm. cheese, grated cheese, parsley and 1 tbs. olive oil in another bowl.

Heat remaining Tbs. olive oil in a skillet over medium heat. Cook the chicken until browned on both sides, about 2 minutes per side. Move the chicken to an oven proof glass bowl and sprinkle with ham then top with the cheese mixture and bake until chicken is no longer pink in the center about 15-20 minutes.
