Oven Roasted Chicken


  • 1 whole chicken
  • 1/2 cube butter
  • 1 tablespoon thyme
  • 1 tablespoon ground rosemary
  • 2 cloves garlic, minced
  •  sea salt and pepper to taste


Pre-heat oven to 350 F.  In sauce pan, add butter and all seasonings and melt.  Gently lift and separate skin from meat at the breast and brush 1/2 of the butter mixture over meat.   Brush remaining butter mixture over top of chicken. 

Every 30 minutes, baste chicken with drippings and bake for 90 minutes or until internal temperature reaches 165 F.
