Low carb pork recipes don't have to be that old dry shoe leather you remember as a child. This bland lower fat animal protein generally needs some sprucing up with fats and spices. Now we know why it is fondly referred to as "the other white meat".
The pork recipes I have included are some of our personal favorites and are easy to prepare.
Some cultures will prepare the pork first with a vinegar soak or other acidic medium. This has been done in cultural and religious groups most notably, in China. This is to reduce the potential for blood coagulation and other fears of which you can read more about here.
Of course purchasing pork from a local farm is your best bet. Look for pork that is allowed to free roam and fed a species appropriate diet. If you have access to wild boar, that is your BEST bet! I live in pig country and the pork that roots for grubs and acorns is the best tasting of any I've ever tried!
Try to remember that when cooking pork, it takes less time than one would assume. Too little cooking time and we fear pathogens, too much and of course we get a dry meat that isn't tasty.
