Low Carb Meatballs

Ingredients: Meatballs

  • 2 Lbs. Ground Beef
  • (I prefer grass fed organic)
  • 3 Tbs. Minced Onion
  • 2 Tbs. Crushed Fresh Garlic
  • 2 Tbs. Italian Seasoning
  • 1 Tbs. Onion Powder
  • 1/2 Cup Parmesan Cheese
  • (I use a parm/romano blend)
  • A few grinds of sea salt and fresh pepper

Ingredients: Sauce

  • 3 14.5 Cans Diced Tomatoes
  • 1 Tbs. Italian Seasoning
  • 1 Tbs. Crushed Fresh Garlic
  • (yes, we love garlic)
  • 1/2 Cube Butter
  • (the secret ingredient)
  • Salt and Pepper to taste

Directions:

In a medium stock pot add all sauce ingredients, heat and stir. Turn off heat and begin with meatball preparation below.

In a large bowl, mix together meatball ingredients. Form into 2" balls and drop into the sauce mixture.

Cover and simmer on medium low for approximately one hour stirring frequently.

Serve over spaghetti squash, butternut puree(as seen in photo)sprinkled with formaggio cheese or just eat plain!

These are the most delicious, tender meatballs you will taste.

Makes 16-18 2" meatballs
