Easy Beef Recipes


Welcome to easy beef recipes! As I have mentioned in our healthy food list, beef is a healthy food. Supplying you with essential fat soluble vitamins, Beef is an excellent source of minerals like magnesium and zinc—you need zinc for clear thinking and a healthy sex life and immune system. Vitamin B6 is abundant in meat, especially rare meat. Red meat is one of the best sources of vitamin B12, which is vital to a healthy nervous system and healthy blood. Vegetarians are especially prone to vitamin B12 deficiency. Beef is also high in Co Enzyme Q10 which is vital to heart health. Yes, Beef is part of a heart healthy diet.

I always throw in my one last caveat and it is this:

Always try to choose as much organic, free range product as you can. Beef are not by nature, corn and soy eating animals. I always dissuade factory farming but I also understand how cost prohibitive it can be. Do the best you can with what you have access to and enjoy our easy beef recipes.

Garlic Stuffed Prime Rib


  • 1 (10 pound) prime rib roast
  • 20 Cloves Garlic, 10 Minced-10 Whole
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 2 teaspoons ground black pepper
  • 2 teaspoons dried thyme

DirectionsMake holes in 10 different spots in the prime rib with a knife and stuff 10 cloves of garlic throughout.

Place the roast in a roasting pan with the fatty side up. In a small bowl, mix together the garlic, olive oil, salt, pepper and thyme. Spread the mixture over the fatty layer of the roast, and let the roast sit out until it is at room temperature, (about 45 minutes)

Preheat the oven to 500 degrees F.

Bake the roast for 20 minutes in the preheated oven, then reduce the temperature to 325 degrees F, and continue roasting for an additional 60 to 75 minutes.

The internal temperature of the roast should be at 145 degrees F for medium rare.

Allow the roast to rest for 10 or 15 minutes before carving so the meat can retain its juices.

This Prime Rib recipe is wonderful served with a side salad and twice baked cauliflower. Definitely a favorite of our easy beef recipes.


Flank Steak Pinwheels


  • 1-2lb. Beef Flank Steak
  • 1//2 Cup Chopped Red Pepper
  • 16 oz. Feta Cheese
  • 1 Large Yellow or White Onion Diced
  • 8 Clove Garlic Minced
  • 1 Cup Crimini Mushrooms Sliced
  • 2 Cups Fresh Spinach
  • 2 Tbs. Olive Oil
  • 2 Tbs. Butter
  • 2 Tsp. Sea Salt
  • Pepper to Taste
  • Butcher String


Place beef flank on cutting board and pound to 1/8" thickness. Some cut flank but I prefer to pound it for tenderness. Set aside.

Saute onions and mushrooms (separately as the mushrooms contain more water)

Sprinkle meat with salt, add all ingredients and roll tightly tying 6-8 sections and cutting respectively. (Each round should have its own tie)

Add olive oil and butter (extra butter if you'd like it for taste) to your skillet and cook on each side for 4-6 minutes depending upon your desired tenderness and wellness.

Grass fed flank only needs to sear on each side for 2 minutes. The reason, it carries less bacteria and therefore can be eaten safely in a rare to raw state.

This also works well with a pork loin.

One of my favorite Easy Beef Recipes and one of my family's favorites

Beef Flank Stirfry


  • 2 pounds flank steak, sliced thinly across the grain
  • 2 Tbs. Tamari or Soy Sauce
  • 4 Tbs. Sesame Oil
  • (Use 2 Tbs. oil and the ginger to marinate beef for 30 min.)
  • 1 Tsp. Fresh Ginger, Grated or Powder
  • (see above)
  • 1 Tsp. Crushed Red Pepper
  • 1 Cup Crimini or White Mushrooms
  • 1 Cup Broccoli
  • 1 Red Bell Pepper, julienned
  • 1 Medium Yellow Onion, Sliced Thin
  • 1/2 Cup Julienned Carrots
  • Handful Snowpeas
  • 1 Cup Bean Sprouts
  • 1 Tsp. Sea Salt
  • Sprinkle of Sesame Seeds
  • 1/2 Tsp. Pepper


Marinate beef in 2 Tbs. Sesame Oil, 2 Tbs. Tamari or soy and ginger for 30 minutes or more.

Quickly flash cook beef for 1-2 minutes, set aside.

Heat remaining oil on medium high heat and saute all vegetables other than bean sprouts. Add the meat and sprouts and cook just long enough to heat sprouts. Plate and sprinkle with sesame seeds.

It is my experience that when the food is chopped smaller prior to cooking or even while eaten, there is a better sense of flavor. Your easy beef recipes tip!

I like to add 1-2 Tbs. Wasabi Mustard to this easy beef recipes dish. Do be warned, we're a spicy, garlic loving family!

Keep in mind that snowpeas and carrots can cause cravings for the Insulin Resistant person so if this is you, eliminate these. You may also substitute Chicken for the beef in this recipe.

Makes about 6 servings

Jalapeno Popper Burger


  • 1 lb Ground Beef
  • 4 Oz. Cream Cheese
  • 1/3 Cup Chopped Jalapeno Peppers
  • (Fresh or canned remove seeds if you don't want as much heat!)
  • Romaine Lettuce
  • 4 Slices Jack Cheese
  • One Large Avocado
  • 1/2 Tsp. Garlic Powder
  • 1/2 Tsp. Sea Salt
  • 1/4 Tsp. Black Pepper

In a small bowl, combine cream cheese, chopped jalapenos, and seasonings mix together and set aside.

You want to make 8 patties with the one pound of ground beef. 4 bottoms, 4 tops. On 4 burger patties, scoop equal amounts of cream cheese mixture, add the burger top and press all sides together.

Place on a medium high grill and BBQ for 5-7 minutes on each side. Do not press with a spatula or cheese mixture will ooze out! Right before you remove from grill add a slice of cheese.

Remove, top with tomato, lettuce and avocado and enjoy!

Misty's Meatballs

Ingredients: Meatballs

  • 2 Lbs. Ground Beef
  • (I prefer grass fed organic)
  • 3 Tbs. Minced Onion
  • 2 Tbs. Crushed Fresh Garlic
  • 2 Tbs. Italian Seasoning
  • 1 Tbs. Onion Powder
  • 1/2 Cup Parmesan Cheese
  • (I use a parm/romano blend)
  • A few grinds of sea salt and fresh pepper

Ingredients: Sauce

  • 3 14.5 Cans Diced Tomatoes
  • 1 Tbs. Italian Seasoning
  • 1 Tbs. Crushed Fresh Garlic
  • (yes, we love garlic)
  • 1/2 Cube Butter
  • (the secret ingredient)
  • Salt and Pepper to taste


In a medium stock pot add all sauce ingredients, heat and stir. Turn off heat and begin with meatball preparation below.

In a large bowl, mix together meatball ingredients. Form into 2" balls and drop into the sauce mixture.

Cover and simmer on medium low for approximately one hour stirring frequently.

Serve over spaghetti squash, butternut puree(as seen in photo)sprinkled with formaggio cheese or just eat plain!

These are the most delicious, tender meatballs you will taste.

Makes 16-18 2" meatballs
