corned beef and cabbage

Slow cooker corned beef and cabbage is a favorite for many low carb dieters.  I often wonder why so many eat this fabulous dish only once a year. 

For those who are practicing a higher carb/starch diet, add potatoes to your recipe.

Ingredients:

  • 3 Cups beef broth
  • 1/4 Cup apple cider vinegar
  • 2 Large onions, quartered
  • 6 Medium carrots cut into 2" pieces
  • 6 Cloves garlic
  • 2 Bay leaves
  • 1 Tbs. peppercorns
  • 1 Brisket, approx. 3lbs
  • 1 Head green cabbage, trimmed and cut into 6-8 wedges (about 2 pounds)
  • Butter

Directions:

In 6 qt. slow cooker, add broth, apple cider vinegar, spices and vegetables.  Set brisket on top, cover and cook on low 9-10 hours or until brisket shreds.  Remove bay leaves and serve topped with butter, salt and pepper.

Variations:

8 Medium red potatoes added to the slow cooker with vegetables

Mashed cauliflower served on the side
