Coconut oil

I do not like coconut at all.

Does coconut oil come in capsules?

And also you have coconut flour listed in recipes, is there a viable substitute?

Thank you

Hi Peggy

I have found that many either like coconut or they do not. Not too many in between.

Personally, I put my coconut oil in my morning smoothie because my husband is not a big coconut fan. I would discourage one from taking the capsules because you would have to take more than 20 daily to reap the benefit and they are highly refined.

Are you interested in coconut oil because of the health benefit? This is one of the reasons I'm such a big fan but I also don't care to make someone feel like they are really missing out on something if they don't enjoy it. Butter also carries the medium chain fatty acids that we find in coconut oil.

While it's not the anti-bacterial/anti-viral benefit, it is still an MCT (medium chain triglyceride) which is very good for us.

In the recipes calling for coconut flour, you can use almond flour but you'll want to reduce the liquid by about half. Coconut flour has a tendency to absorb about twice the amount of liquid as other nut flours.

In good health
Misty
