Chunky Turkey Soup

Chunky turkey soup is one of the best parts of a post turkey dinner.   This Phase II recipe is hearty, warming and the perfect one pot post work out meal. 


  • 6 cups turkey or chicken broth, homemade
  • 2 cloves garlic, minced
  • 1 tsp. thyme
  • 1/2 teaspoon rosemary
  • 4 Large Carrots
  • 1 cup diced butternut squash
  • 1/2 cup diced rutabaga
  • 1/2 cup diced celery
  • 1/2 cup diced onion
  • 1 1/2 cups small broccoli florets
  • 3 cups diced cooked turkey
  • Salt and pepper
  • shredded gruyere cheese, for serving
  • (optional)

In a large saucepan, combine the broth, garlic, thyme, and rosemary. Bring to a boil over medium-high heat and boil for 5 minutes.

Add the butternut squash, rutabaga, celery, carrots and onion. Cover and return to a boil. Reduce to a simmer and cook for 30 minutes.

Add the broccoli and simmer until all the vegetables are tender, 10 to 15 minutes.

Stir in the turkey and cook to heat through. Season with salt and pepper to taste. Serve with Gruyere (if desired).
