butternut squash soup

Here is a warming butternut squash soup recipe perfect for your Phase II meal plan.

I love to have a different flavor soup on hand at all times.  This is an easy way to get nutrients in from a variety of vegetables and of course the benefits of soup with most meals can be seen in traditional diets.

Ingredients:

  • 1 Whole Butternut Squash Roasted or 2 Cans Pureed Butternut Squash
  • 4 cups Chicken Broth or 32oz. Box Organic Chicken or Vegetable Stock
  • 4 Cloves Roasted Garlic-minced
  • 1/2 Cup + 1 tbs Coconut Milk
  • 1 Tsp. Nutmeg

Directions:

In a stock pot add squash, stock, garlic and nutmeg bring to a simmer and slowly add in 1/2 cup coconut milk.

Serve garnished with 1 Tbs. Coconut Oil & 1 tbs. Coconut Milk.
